Grew up on a small farm and we butchered all of our meat. Canned beef because we didn't have electricity was plentiful.
When we butchered a hog, Mom made the best head cheese I've ever eaten. Still miss that. Ate a lot of ducks, rabbit and pheasants, seldom in season.
Man I haven't made head cheese and scrapple for way too long. I gotta go get a pig head.

Lamar's experience with weight gain in basic training reminds me of my Sheriff's Academy days. After 4 years of working at a grain mill--going up and down elevator ladder sets, sacking and lifting 100# sacks of grain and feed all day--the "physical training" part of the course was a cake walk. I had been in college during that same 4 years, so the study skills were in good order as well. The chow wasn't bad, either. I didn't gain weight, but I didn't lose any weight either. A lot of my classmates lost significant weight during the 14 week event. These days, my old shop's academy lasts 28 weeks. 6-1/2 months of that [blank] now. I was a very different person at age 22 than I am now as a 64-year-old, but I am still not sure I would sign up for such entertainments.

Like Bret, I grew up in a resterant (dining car. truck stop).
Hambergers, hot roast beef sandwiches w/mashes potatoes,
and vegetable. Trucker and farmer food. Coffee a nickel a cup
w/refill. Right after the war. I got off a school bus, put on an
apron, washed dishes, served coffee etc. This was before
interstates.
