Gee, blue berry pancakes for lunch yesterday. Then a good steak with potato, asparagus and a glass of red wine for dinner. Asked her what she was wanting? No answer - oh oh.
Sounds great! And isn't it amazing to have asparagus in the middle of winter?

Well tonight it is one of my favorites: Chicken Provincial!
With Wild Maitake mushrooms ( Havested last Fall), button mushrooms, fresh garlic cloves and carrots! Also made Potato Scones with butter.
Carrots are all I have left of the root vegetables! Decided to put everything under the broiler a few minutes when it was done to get an extra crip skin and a good toast to the veggies! It worked!

Not cooked by me but...
Just went to the local class of57.
Kinda the restaurant that the old folks go to around here.
Had blackened Smoked Salmon on a bed of Basmati and brown rice mixed with fresh dill and lemon rind.
Oh my goodness. The rice combo was excellently done. The salmon was blackened on the outside, served streaming hot and perfectly cooked through.
With a side dish of cinnamon roasted butternut squash.
Washed down with a local winery made Rose wine.
Meal worth twice what we paid easy.
And from an old people burger, and soup hang out!

Well tonight I had my Late Brothers last Brook Trout! Did it baked in foil with Olive oil, Fresh Thyme from my garden a bit of garlic and lime juice!
Also did along with it, in the foil, some button mushrooms & fresh arugula!
I made a classic French remoulade sauce which was an excellent condiment with it. It was delightful

Back Here in the Polish Northeast of Pennsylvania, We folks have potato pancakes for supper with just salt or maybe sour cream. I like it both on mine! Now my one past brother loved maple syrup on his ( Still for supper) So when my family got together for a Lenten meal of Potato pancakes at this time of year; we all ate them our favorite way but the last batch had to have syrup on them to honor my 2nd pasted brother! Now that all my brothers are pasted I'm not sure my niece will continue the traditional Lenten meal for just me and the 3 living wives? I sure miss those times!

Have not had any pancakes in a while. Hard on the diabetes. And I can't stop at just 1 or 2 silver dollar ones.

Growing up we called potato pancakes "tatercakes". My favorite way was served with bacon gravy. Or folded like a taco, with pan fried onion in the middle.
But also as is, just taking one and folding it in half, with nothing on it. They were good eating.

Since we raised a lot of sweet corn, and ground a lot meal, we also made corn cakes. Nothin like corn cakes with home made straw berry jam, and a big pat of real butter on top. After coming in from shoveling snow.

Not on the grill!

Traditional St. Paddy's Day Corned Beef & Cabbage dinner. One pot cooking option. Corned beef (boiled 2.5 hours) with potatoes, carrots and cabbage, added the last hour or so.

Flat cut, not the point cut. Whenever Cindy makes it, she immediately thinks of my mom. She never had it before we were dating, in 1972.

Cindy had not so green beer, while I had more than two glasses of Pinot Noir.
