Not on the grill!

Traditional St. Paddy's Day Corned Beef & Cabbage dinner. One pot cooking option. Corned beef (boiled 2.5 hours) with potatoes, carrots and cabbage, added the last hour or so.

Flat cut, not the point cut. Whenever Cindy makes it, she immediately thinks of my mom. She never had it before we were dating, in 1972.

Cindy had not so green beer, while I had more than two glasses of Pinot Noir.
Same dinner here! Only mine is Crock Pot with Beer/stock. Potato/Carrot added 1/2 thru. Meat and Onion/ spices 8hr cook. Just put in the Cabbage in W/ 2 hrs ta go. Irish Soda Bread as a side too!!

Karen and I decided to change it up this St Paddy's Day and made a big ole Shepard's Pie! We haven't had that in a number of years.
The big problem was there was enough for six servings and we split it in half between us :oops:!
I'm way over my sodium allowance for today and she her calories! She enjoyed a glass of Pinot Grigio and I a Cabernet.
Nothing green but our clothes!

I did a Chuckeye roast ...prime rib style.
These small roasts (about 3 lbs) are easy to over cook, so you need to watch the internal temp closely.
I follow the recipe below fairly closely (a rare thing for me to say, pardon the pun), with one exception, I rinse and soak the roast after the 24 hr dry salt wrap.

Did not even realize it was St Paddies day. Just another work day for me.
Eh, maybe that will give me an excuse to stop and buy some beer, and make some Irish stew in the morning. For my day off.
Think I have a goats leg lying around, in the freezer, close enough to lamb for a stew. Know I have Parsley, Potatoes Carrots and Onions.

I didn't either, maybe that's why all the local stores have had corned beef on sale for a couple weeks. Wife has picked up half a dozen over several grocery trips to put in the freezer for later. We've already had the carrots/potatoes/cabbage routine with one of them but next time we're going straight to hash with it. I like eggs and corned beef hash.

A big yes on that. Sadly, to keep sodium levels down, haven't had hash in a little over 2 years. Also, very much miss pastrami and corned beef sandwiches.

Not following St. Paddie's Day tradition, but it is Friday, so fish: baked salmon. Slathered the top with a mixture of Japanese mayonnaise/wasabi/low sodium soy sauce, then a liberal sprinkling of panko.

Well started on my authentic Irish stew. The recipe, not me. I have not a stich of Irish in me, but the wifes family is Irish and Italian. (Kentucky Natives)
Had the wife pick up some white wine and thyme while out.
Cubing goat leg.
Unthawing a lb of bacon. To make a gravy with flour that will eventually become part of the stock. Pealing and quartering potatoes, pealing carrots, bought some fresh parsley, 2 cloves of garlic,and some plain, brown skinned onions..
